Goats Cheese Overload, Just How I Like It. A Simple Baked Potato Salad. Easy Side Dish That Goes Well With Fish Or Meat.

If you love goats cheese as much as I do then you're definitely going to enjoy this. Creamy goats cheese oozing everywhere. The addition of lemon zest does it for me. Deeeeelicious!  

Ingredients 
400g baby new potatoes
2 tbsp fresh parsley chopped 
3 cloves fresh garlic crushed 
2 tbsp fresh rosemary chopped 
1 tbsp black pepper 
1 tbsp salt 
50g creamy goats cheese 
Juice of 1/2 lemon
Zest of 1 lemon
Handful of chopped spring onions 
1 tbsp red chili flakes
1 tsp English mustard 
2 tbsp butter melted 
2 tbsp low fat yogurt

Method
Pre-heat the oven to 200'c
Combine all the above ingredients besides the creamy goats cheese in a small roasting dish with baking paper, make sure everything is well coated. Scatter the creamy goats cheese on the potatoes and transfer to the oven.
Bake for 30-40 minutes. Poke a knife through the potatoes, if there soft then place back in the oven under the grill this time for a further 5 minutes and enjoy. 



Easy peasy I told you. If you're not a goats cheese lover then you can always use a cheese of your preference.
