It's perfectly poached eggs on toast with goats cheese of course!



Recipe
2 slices tiger bread
2 eggs
4 Cherry tomatoes
1 tsp Fresh basil
1 tsp butter
1/2 tsp garlic powder
2 tsp olive oil
Salt & pepper to taste
Crumbled goats cheese   
Method 
Spread butter on both sides bread & place on the electric grill till toasted
Meanwhile boil some water & transfer to a pot on high heat. Once it starts boiling, lower the temperature & let it simmer. Get 2 small food bags & pour in 1 tsp olive oil in each bag & crack the eggs in the bags (one in each) tightly tie a knot on the bags & place in the water for about 3 minutes stirring half way.
Whilst the eggs are poaching, in a small pan melt the butter, chop the cherry tomatoes in half & add to the pan, season with garlic powder, salt & pepper & let it cook on low heat for about 3 minutes until softened.
Place your grilled toast on the Plate then after 3 minutes check the eggs, if there slightly firm & soft on the outside there ready to take out. Using scissors cut just below the knot & slowly take the poached eggs out & place them on top of the toast. Sprinkle with salt & pepper. Top the eggs off with The cooked tomatoes, crumbled goats cheese & garnish with basil. Serve immediately & enjoy :)
